Classic Pumpkin Soup

A super easy and creamy pumpkin soup with just a touch of cream for a hint of luxury.

Ingredients

Method

  1. Cut pumpkin into 3cm slices, remove skin and seeds, then cut into 4cm chunks.

  2. Place pumpkin, onion, garlic, broth, and water in a large pot. Bring to a boil, then reduce heat and simmer until pumpkin is tender, about 10 minutes.

  3. Remove from heat and blend with a stick blender until completely smooth.

  4. Season with salt and pepper, then stir in cream.

  5. Ladle into bowls, drizzle with a little extra cream, add a crack of pepper and parsley if desired. Serve with crusty bread.
