One Pot Broccoli, Chicken and Rice Casserole

A creamy from-scratch chicken, broccoli, and rice casserole that tastes like risotto but is much more straightforward to make.

Method

  1. Melt butter and heat oil in a large pot over high heat. Add onion and garlic, cook 1 minute. Add chicken and cook until the colour changes from pink to white.

  2. Reduce heat to medium. Add flour and stir for 1 minute.

  3. Add half the milk, stirring continuously, then add the remaining milk.

  4. Add broth, rice, thyme, salt, and pepper. Stir to combine.

  5. Bring to a simmer, cover, and reduce heat to medium-low. Cook for 12 minutes.

  6. Remove lid. Add broccoli florets, pushing them partly submerged into the rice. Cover and cook for 3 more minutes.

  7. Remove lid. Stir in half the cheese, then top with the remaining cheese. Broil until cheese is melted and bubbly.

  8. Serve immediately, garnished with parsley if desired.
