Spaghetti Bolognese

A thick, rich Bolognese with great depth of flavour, made in just 30 minutes.

Method

  1. Heat oil in large pot over medium-high heat; add onion and garlic, cook 3 minutes until softened.

  2. Increase heat to high, add beef, breaking apart while cooking until browned.

  3. Add red wine, simmer 1 minute while scraping pot bottom until alcohol smell dissipates.

  4. Add remaining sauce ingredients, bring to simmer, reduce to medium heat, cook 20-30 minutes uncovered, stirring occasionally.

  5. Taste and adjust salt.

  6. Boil salted water, cook pasta one minute under package directions.

  7. Reserve 1 mug pasta water, then drain pasta.

  8. Add pasta to sauce with ½ cup reserved water over medium heat; toss 1-2 minutes until coated.

  9. Divide into bowls and garnish with parmesan and parsley.
